We are so excited for all that this New Year has in store. We have lots of fun events planned for you all, as well as challenges to help keep you motivated and remembering your “Why”.

Have you sat down with yourself and made some quiet time to write about things that are important to you? Making that time just to start can be the beginning of a fantastic domino effect that allows you to really change the trajectory of your life.

Sit down with a bowl of this delicious Paleo Pad See Ew (recipe adapted from Against All Grain), and start brainstorming. Nothing like some nourishing food to get the right ideas flowing and the God-inspiration going. We have substituted spinach for broccoli as well, and it is JUST.AS.GOOD.

Root veggies (carrots, onions) are enormously beneficial because of their higher mineral content. Because the actual vegetable grows directly in the soil, it can soak up that many more minerals from the dirt itself. And they are the perfect seasonal food! Mushrooms were also added to this dish to give it that nice umami flavor with the coconut aminos and an extra immune boost!

Let’s get chopping/peeling/dicing and slicing, fam!

INGREDIENTS:

+5-6 garlic cloves

+1/2 large yellow onion

+2 1/2 cups spinach

+1pkg frozen (cheaper) or fresh broccoli

+7-9 carrots peeled (wash and peel the outside skin off if non-organic and discard. If organic, keep and use in the dish)

+5 large button or shiitake mushrooms

+1lb (organic, free-range or pasture-raised if possible) chicken breasts or tenders! (Trader Joe’s has a great meat selection for less than the average grocery store)

+2-3 tablespoons ghee or coconut oil (both have a high heat point-meaning they won’t get hydrogenated easily)

+1/3 C coconut aminos or liquid aminos

+1-2 tablespoons honey or coconut sugar

+2 eggs (if you so desire; I preferred it without the eggs)

INSTRUCTIONS:

  1. Wash and peel carrots into long thin strips (like the rice noodles typically in pad see ew)
  2. Dice garlic and onion very small, and put into cast iron with the ghee. Heat pan over medium heat.
  3. Slice chicken very thinly on diagonal and add to the pan.
  4. Cook until chicken is white on all sides. While chicken is cooking, chop broccoli+ mushrooms.
  5. Add broccoli, mushrooms, carrots, coconut aminos to chicken. Mix thoroughly.
  6. Chop spinach and add when carrots are almost tender, about 5-7 mins.
  7. When spinach is cooked, add honey and turn the heat down for 5-7 minutes to get rid of some of the extra moisture.
  8. Directly from Danielle Walker’s Against All Grain Blog: “Push the stir-fry aside in the pan, then crack the 2 eggs into the pan and stir vigorously to scramble them. Let them cook for a minute until they have firmed up, then mix everything back together.”
  9. Let cool for a few minutes then enjoy while hot!
